Do I need to affix two Notary stamps for an acknowledgment?

When an acknowledgment is requested, are two stamps needed?J.G., Colorado

No; only one official stamp is needed to be placed on the acknowledgment certificate (see CRS 24-21-515(2), which says “an official stamp” must be placed on the certificate, not two).
